Lucas has hatched and raised a brood of heritage turkeys. The breeds include Royal Palm, Bourbon Red, and Beltsville Small Whites. While these birds tend to grow more slowly, they develop a darker, richer meat with an almost nutty flavor. By hatching these birds (compared to buying chicks as is the industry standard) Lucas has been able to ensure stress free, happy lives that allow for tender meat.

All three of these heritage breeds were standardized around the turn of the 20th century and sold as sustainable livestock for small farms. As Broad Breast become more commercially valuable due to high growth rate and large breasts, these heritage breeds fell out of favor. Heritage birds are leaner with a more equitable dark meat to white meat ratio- the meat is almost velvety tender.
